Red Label Premium Cocktail Oyster

  • Size: 2.5 – 3 inches (6.5 – 7.5cms)
  • Oyster lovers will find full-bodied, firm oysters with a crisp taste. Flavourful but not too salty.
  • Easy to shuck with their hard shells that won’t splinter.

The taste of an oyster reflects its environment. Sweet Oysters grow in a nutrient-rich shallow estuary – oyster heaven. Estuaries are called ‘transition zones’ as fresh river waters mix with the salty tidal pure waters of the North Atlantic – bringing oysters their complex and subtle taste.

Cascumpec Bay is especially fortunate as the Cascumpec Sand Hills protect our oysters from the rolling waves of the St Lawrence and the fiercer North Atlantic.

Growing Sustainably

Our Sweet Oysters are housed in oyster crates, called oyster cages.

In springtime, we bring up them up near the surface, so our oysters get the best quality and quantity of nutrients.

As they float near the top, sea grass and other sea life can thrive and we don’t have to damage the sea floor to harvest our oysters.

As winter approaches, we tip the cages lower into the water, protecting our oysters from the ice of the Canadian winter.

Shape and Size

It takes 3 years to grow our Sweet Oysters from the baby 1.5mm spats to the 3-inch oyster that you enjoy on your plate.

During that time, we sort, tumble, re-crate, re-house, measure, clean and turn the crates every 2 weeks….all the care and work needed to ensure premium quality oysters.

As our oysters grow they are sorted – tumbled. Each oyster is tumbled at least once a year. This means that they can be graded and sorted into our categories of
